Got any left over sourdough starter? This recipe is perfect for using it up.
What you need:
· 3 whole eggs
· 170ml whole milk
· 120ml sourdough starter (a bit more, a bit less doesn’t really matter)
· 100g plain white flour
· a couple pinches of salt
· 1 tbs of butter, melted.
Crack the eggs into a big bowl and brief whisk. Add the milk and sourdough, followed by the salt and the flour.
Whisk it all up into a batter consistency, then stir in the butter until well dispersed.
Fry the pancakes in a large, oiled frying pan.
We love these served with spicy sausage or lashings of maple syrup.
